Adam Smith is currently considered one of the most talented chefs in the UK, guided by the ethos ‘taste is king’ and enjoying a reputation for masterful, classic-based cooking with a modern presentation.
In 2004, Adam received his first opportunity and joined The Ritz under the guidance of Chef John Williams, where he was entrusted with responsibility for the larder. By 2012, he was sous chef at The Ritz, with many culinary awards to his name, including the Observer Food Monthly Young Chef of the Year title. In the same year, Adam won the Roux Scholarship, which prompted Michel Roux Sr. to call him ‘someone to watch”.
In 2013, Adam joined The Devonshire Arms as head chef, overseeing all food operations, including The Burlington Restaurant, the Devonshire Brasserie, and conference and banqueting services. During this time, The Burlington Restaurant was the only new restaurant to receive the coveted four AA Rosettes in the January 2015 guide. In 2016, Adam joined the only country house hotel within the Dorchester Collection, Coworth Park, as head chef overseeing all culinary operations, with a particular focus on Restaurant Coworth Park.
In 2017, Adam was named a Master of Culinary Arts by the Royal Academy of Culinary Arts, the highest culinary and hospitality accolade in the UK, awarded only every four years. In 2018, Restaurant Coworth Park received its first Michelin star in the Michelin Guide UK & Ireland. Adam was honored with the Chef of the Year award at The Hotel Cateys 2018, with the judges describing him as a ‘true all-rounder,’ praising his intuitive, adaptive, and passionate approach to managing the team at Restaurant Coworth Park. In 2019, Adam was shortlisted for the Best Chef award at the GQ Food & Drink Awards.
Restaurant Coworth Park closed in the summer of 2022 to make way for a new restaurant at Coworth Park: Woven by Adam Smith.
Woven by Adam Smith, which opened in September 2022, offers guests an unforgettable dining experience in a stunning new space overlooking 240 acres of picturesque Berkshire parkland. Adam’s menu is a tapestry of familiar flavors, reimagined in unexpected ways, blending classics with modern touches and layers of personal experiences. The highest quality produce from the British larder inspires the seasonally changing menus.
Woven by Adam Smith received its first Michelin star in 2023, just six months after opening. In 2024, the restaurant was awarded 5 AA Rosettes at the prestigious AA Hospitality Awards, joining an elite group of only 19 British restaurants to achieve this distinction. In the same year, Adam showcased his culinary talents on the BBC Two program ‘Great British Menu.’ Competing against 32 of the best chefs in the UK, Adam secured a place at the prestigious banquet held at the British Ambassador’s residence in Paris.
